This week in Genius Hour I decided to make another dish that is closer to home. Even thought they aren't healthy at Mcdonalds, I think Big Macs are good in taste. Personally I thought this was the best recipe yet. I've always wanted the Big Mac sauce to use for myself and this I can say was pretty close to the original sauce from Mcdonalds. Overall the recipe was pretty easy but involved skills I haven't used much yet. In this recipe I had to sear the patty, which I haven't done yet. I had to get help from my mom to get the patty cooked right. In the end I would say the patty came out pretty good. The sauce itself and the burger tasted the best out of all my recipes so far. I'm not going to say it was close to an actual Big Mac but it was still really good. It only took around 15 minutes to prepare and cook.

This week I decided to do zucchini pizza boats. I saw many different recipes revolving around zucchini boats such as this one, burrito boats, and meatless boats. I chose this because of how relatable pizza is. Overall this recipe was more difficult than any other I have done yet, having to sauté and bake plus preparing the zucchini before hand. Me and my mom both enjoyed these unlike my dad who doesn't like zucchini. The total time taken to fix this was around 30 minutes. This recipe was more complicated than the rest with having to scoop out the insides of the zucchini, having to sauté, and having to bake them to get to the right tenderness and softness along with getting the ingredients cooked right. These consists of the zucchini with marinara inside, cheese and pepperonis on top. The boats had the pizza flavor, which made them pretty good, but just like the cauliflower mash potatoes, the texture was off. Having the more crunchy feel of the zucchini rather than the softness of the dough made it different but overall still really good. I would definitely make these again.
On this week of my Genius Hour project I decided to make something that hits close to home. I have always been a big mash potato eater and chose to try and recreate them to the best of my ability while keeping it low carb. I've seen many people use cauliflower as a replacement for the potatoes in this but I thought it wouldn't taste to great. To my surprise it actually wasn't that bad, although definitely not comparing to actual mash potatoes. Making the mash potatoes was quite easy and the recipe was simple. It didn't require many ingredients and not much hands on mixing. It took around 15 mins to prepare. The end result, I would say, is considered a success. It mainly taste like cauliflower but has the buttery, creaminess of mash potatoes. I would say it gives the same texture of original mash potatoes with more vegetable twist.
For Genius Hour week two I decided to incorporate baking into my project. This is a Keto diet recipe with only around 2 carbs per serving. Each serving is around one of the rolls. Baking this week was definitely more difficult then last weeks omelet. I personally haven't done very much baking before. I had one failed attempt before I got the right outcome. The bread as you can see below in the images, looks pretty good and I even added some jelly to make it better. The bread itself didn't have as much taste as a normal biscuit or roll of bread would have. It by itself wouldn't be that great so I tried it with jelly and with butter separately and it improved the taste a good bit. When I let my family try it they thought the same as I did, the rolls themselves didn't have much of a taste but with jelly or butter it made them better. Baking this took around 10 mins to get everything together and around 15 mins to bake till done. I feel as this wasn't as successful as last weeks omelet. It was a lot of fun to mix it up and bake some!
The first thing I decided to make for my genius hour project was a ham and cheese omelet. I have always been a breakfast person so I thought this would be something that I would enjoy cooking but also eating. I've always enjoyed getting omelets when going to restaurants and being able to cook them would give me the ability to make them when I want one instead of having to drive and pay for one.
For this project I was going to start easy and get harder with recipes as I go. An omelet is very easy to make. It took around 15 mins to make. I needed a little bit of help with flipping it but overall it turned out very well. Each week I will try and find something harder but not by to much. The main thing I had trouble with was the flipping but the rest went pretty smooth. I had a genuine good time cooking this omelet and gave me time to bond with my mom who helped and videoed the video on my instagram @type1_lowcarbcooking. My mom and I both tasted the omelet. Her and I both thought it was pretty good, it was also cooked the right amount except it was a little runny on the inside. For this being my first thing to cook for this project, I think it was pretty successful. I would count this as a first success with increasing my cooking skills. |
