On this week of Genius Hour I went for the most complex recipe out of anything so far since it was the final week. I decided to do a steak with a side salad. I of course chose the filet mignon as that is my favorite cut of steak. With it being steak it was definitely the best tasting out of everything I cooked this whole project, although it was the hardest. When cooking the steak I like mine medium rare which is difficult if you haven't cooked steak before. I had to get a little bit of help from my mom on the timing but I would say it came out pretty wel to make a delicious meal. I also made a side salad that included lettuce, ranch, cucumbers, cheese, tomatoes, onions, and radishes. I'd have to say this meal was the best for everybody as we all enjoyed it the most. I would definitely recommend a steak with a good side salad, always!

On this week of Genius Hour I decided to make a high protein low carb meal. In this recipe I used a Ninja Foodi to cook the Tenderloin. It used two different large chunks of tenderloin both wrapped in around 10 or so strips of bacon. I would say this was one of the best as it had such a great smell while being cooked and it was a main part of our supper. Cooking the tenderloin took around an hour which is probably the longest it has taken for any of the recipes. We paired the tenderloin with some vegetables to create a pretty well rounded and amazing meal. My family and I both believe that this was really good and it is going to become a recipe we will use more in future meals.
This week on Genius Hour I decided to go for more of a meal than a snack. One thing that my family usually fixes is tacos. So tonight I decided to take over and cook the meat for the tacos. My mom and I decided to try and make a taco salad with no shell. This recipe is pretty simple as it really only includes the meat, vegetables and toppings that you would like as in lettuce, tomatoes, avocado, and even salsa as a dressing. As I said before this recipe is simple as it only took around 30 minutes to make. It involved me cooking the meat and adding the seasoning, which we use from a Old El Paso taco box. I really enjoy tacos but I usually use a soft shell tortilla so this put a good twist on it. On mine I put tomatoes, lettuce, taco sauce that also comes in the Old El Paso box, and cheese. This was actually really good and I would definitely eat it again.
This week on Genius Hour I decided to make another quick and easy snack that I genuinely enjoy eating. This is just a mix of bacon bits, celery, and ranch into a bowl like a salad. It's very simple and only takes around a couple of minutes to make but it helps to hold you over until your next meal. I have ate this since I was young and thought I'd share it now that I had a chance. This weeks snack has a very flexible recipe. There isn't really any measurements involved with it. You can put as much or as little of whichever ingredient as you want. You can make it to your liking in taste and amounts of each item. It also barely has any carbs except for the little bit that you have in the ranch so it fits really well with the theme of my project. I recommend trying this one as I've always enjoyed it.
On this week of Genius Hour I decided to make a quick and easy snack that can hold you over until your next meal. This easy snack doesn't really have measurements, it really just goes by taste and the texture you want. It's just a combination of chicken, mayonnaise, ranch, dill relish. This was also a more chaotic week as I didn't have many ingredients to work with so I had to get creative. This week was more of a snack week instead of a meal. The chicken salad rollups were pretty easy to make and only took around 5-10 minutes. It didn't take much skill so anybody could do it which makes this a pretty universal snack. You can also use either canned or fresh chicken to make it. I hadn't really tried much chicken salad in the past but it was pretty good and my mom and I ate all the rolls. We also came up with a little nickname calling them "chicken salad sushi rolls".
This week for Genius Hour I decided to cook supper for my family. This was a more complex recipe or meal because I didn't use an online recipe and it had a lot of elements. I had to cook the green beans in a pot on the stove while putting the roast in a Ninja Foodi pressure cooker. This overall took around 1 and a half hours to make. As I made this for supper, everybody enjoyed it. I would say this was very successful as we all enjoyed it along with eating mostly everything that was fixed. We had basically no left overs. This week had a lot more pressure included as I fixed the only supper for the night. This has probably been the hardest week so far.
This week in Genius Hour I decided to incorporate some slow cooking. We made this with no recipe as we've made it many times before. This is something that is also close to home which has been a theme for the past couple weeks of Genius Hour. Overall it's very simple to make and only included four ingredients of hot sauce, chicken breast, ranch, and creme cheese. Although this recipe is super simple, it's extremely good. It may go a little bit higher on the carbs but still works good. It also took more time than the other recipes as it took around an hour to do and that was with using a ninja foodi. I would have to say my family and I enjoyed this the most out of the past recipes, but that's just for now as there are many weeks left ahead of us for better recipes.
This week in Genius Hour I decided to make another dish that is closer to home. Even thought they aren't healthy at Mcdonalds, I think Big Macs are good in taste. Personally I thought this was the best recipe yet. I've always wanted the Big Mac sauce to use for myself and this I can say was pretty close to the original sauce from Mcdonalds. Overall the recipe was pretty easy but involved skills I haven't used much yet. In this recipe I had to sear the patty, which I haven't done yet. I had to get help from my mom to get the patty cooked right. In the end I would say the patty came out pretty good. The sauce itself and the burger tasted the best out of all my recipes so far. I'm not going to say it was close to an actual Big Mac but it was still really good. It only took around 15 minutes to prepare and cook.
This week I decided to do zucchini pizza boats. I saw many different recipes revolving around zucchini boats such as this one, burrito boats, and meatless boats. I chose this because of how relatable pizza is. Overall this recipe was more difficult than any other I have done yet, having to sauté and bake plus preparing the zucchini before hand. Me and my mom both enjoyed these unlike my dad who doesn't like zucchini. The total time taken to fix this was around 30 minutes. This recipe was more complicated than the rest with having to scoop out the insides of the zucchini, having to sauté, and having to bake them to get to the right tenderness and softness along with getting the ingredients cooked right. These consists of the zucchini with marinara inside, cheese and pepperonis on top. The boats had the pizza flavor, which made them pretty good, but just like the cauliflower mash potatoes, the texture was off. Having the more crunchy feel of the zucchini rather than the softness of the dough made it different but overall still really good. I would definitely make these again.
On this week of my Genius Hour project I decided to make something that hits close to home. I have always been a big mash potato eater and chose to try and recreate them to the best of my ability while keeping it low carb. I've seen many people use cauliflower as a replacement for the potatoes in this but I thought it wouldn't taste to great. To my surprise it actually wasn't that bad, although definitely not comparing to actual mash potatoes. Making the mash potatoes was quite easy and the recipe was simple. It didn't require many ingredients and not much hands on mixing. It took around 15 mins to prepare. The end result, I would say, is considered a success. It mainly taste like cauliflower but has the buttery, creaminess of mash potatoes. I would say it gives the same texture of original mash potatoes with more vegetable twist.
